GREEN COVE SPRINGS – Pool halls aren’t typically known for their fine cuisine but Justin Rigsby is trying to change that in his little piece of the universe.

Rigsby opened Justin Time for Lunch/Take-out inside The Corner Pocket, 14 N. Magnolia St., about three months ago and it’s doing well so far.

"We’ve got all kinds of sandwiches and burgers," Rigsby said. "Our burgers are ground chuck and you get a half-pound burger with one side for $5.95."

The Corner Pocket was purchased last year by Rigsby’s parents, Laurie and David.

Justin Rigsby brings his experience as an assistant manager for Bono’s and working as a cook at Longhorn Steakhouse and The Olive Garden to the new endeavor.

Customers can expect freshly made tuna and chicken salad along with deli style meats such as turkey and roast beef. He also offers a tasty soup of the day, including tomato bisque, chicken noodle or French onion, for $1.99 per 8-ounce bowl.

"I make those from scratch," he said. "My biggest thing I that aim to please."

Serving times are 10:30 a.m. to 3 p.m. daily.

Justin Time for Lunch/Take-out serves the Green Cove Springs area and can have meals prepared in advance. Customers should call (904) 284-1992 or fax their orders to 284-6221.
